Easy Chocolate Cake Recipe – perfect as a cake, cupcakes or mini cupcakes

This recipe has been a long time favourite in our house. It’s quick and easy to make, kids can do most of the work, and it’s delicious!

Our eldest is currently five and for the past few years has been helping make this cake for Hubby and my birthdays. We use our Quick and Easy Icing Recipe and she loves being allowed to choose the colour of the icing and some lollies to decorate the cake with. It’s a great opportunity to give her the freedom to be creative and she feels extra special being entrusted to decorate the cakes for Mummy and Daddy’s birthdays.


Easy Chocolate Cake Recipe


  • 1 cup self raising flour
  • 1 cup sugar
  • 1/3 cup cocoa powder, sifted
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla essence
  • 125g butter


  1. Pre-heat oven to 180oC.
  2. Place flour, sugar and cocoa into a medium sized bowl and stir to combine.
  3. Add eggs, milk and vanilla and stir to combine.
  4. Place butter in a small saucepan and melt over low heat.
  5. Cool melted butter slightly, then add to the other ingredients.
  6. Give the mixture a good stir for a few minutes.
  7. Pour cake mixture into a 20cm round cake tin that has been lined with baking paper and greased with butter.
  8. Bake for 30-40 minutes or until a skewer or toothpick inserted into the centre of the cake comes out clean.


Melting the butter is a task for an adult or an older child under close supervision. Always keep saucepan handle facing towards back of stove so littlies can’t easily reach it.

To avoid stray broken egg shells, always crack eggs into a separate bowl or cup before adding to your mixture.

This basic cake batter works well as either one cake, 12 cupcakes or 24 (or more) mini cupcakes. For cupcakes, reduce cooking time to approx. 20 minutes. For mini cupcakes, reduce cooking time to approx. 10 minutes or until a skewer or toothpick inserted into the centre of a cupcake comes out clean.
